Broccoli and Chz Quiche

Ingredients
- 1 refrigerated 9-inch pie crust
- 2 cups broccoli florets, fresh or thawed frozen
- 1 cup shredded Gruyere or Swiss cheese
- 8 ounces light vegetable cream cheese, softened at room temperature
- 3 large eggs plus 2 large egg whites
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper

Step 1
Preheat oven to 375 degrees. Press pie crust into the bottom and up the sides of a 9-inch pie plate. Set aside.
Blanch broccoli in a small pot of boiling water for 30 seconds, or steam in the microwave for 1 minute. Drain and arrange the broccoli in the bottom of the pie crust. Top with shredded cheese.
Whisk together the cream cheese, eggs, egg whites, salt and pepper. Pour the mixture over the broccoli and cheese. Bake for 30 to 40 minutes, until the crust is golden brown and the filling is set. Let the quiche stand for 10 minutes before slicing into wedges.
Makes 8 servings.
