Ingredients
- 2 dozen littleneck clams
- 1/2 lb butter, soft
- 3 strips bacon
- 2 shallots, chopped
- 5 cloves garlic, chopped
- 3 T chopped parsley
- 1/2 cup parmesan cheese
- 1/2 cup bread crumbs
- 1 tsp salt
- 1 tsp ground pepper

Preparation
Step 1
1. Steam clams until they open. Let cool.
2. Remove clams from the shells.
3. Reserve one half of the clam shells and wash them.
4. Place clams back into the shells.
5. Sweat the bacon in the microwave until it is slightly crisp.
6. Allow bacon to cool and chop into small pieces.
7. Place butter, bacon, shallots, garlic, parsley, parmesan cheese, salt and pepper into a food processor.
8. Pulse until all combined.
9. Spread butter compound onto the clam.
10. Sprinkle with bread crumbs.
11. Place under a broiler until bread crumbs brown.
