Ingredients
- Crust:
- 1 cup flour
- 1/2 tsp. Salt
- 1/3 cup + 1 tbsp shortening
- 2-3 tbsp. water
- Custard:
- 3 eggs
- 1 1/2 cups heavy cream
- 1/4 tsp. pepper
- 1/2 tsp. salt
- 1 pinch nutmeg
- 1 1/2 cups Swiss cheese (grated)
- Vegetables:
- 1 1/4 cup spinach (cooked and chopped)
- 1/4 cup onion (diced)
- 1/4 cup mushrooms
- 2 tbsp. melted butter
- 2 tbsp. parsley
- 4 tbsp. parmesan cheese

Preparation
Step 1
Mix flour, salt and shortening, then add the water to make the crust. Bake at 475 for 8 minutes.
Beat the eggs and the cream, then add the other custard ingredients.
Saute the spinache, onion and mushrooms in melted butter for 10 minutes. Stir into custard mixture. Pour into pie crust shell, add (to top) remaining ingredients. Bake 30-35 minutes in 375 oven until golden and puffy.
