Sweet Potato Cakes
great for breakfast side or dinner side
- 2 medium sweet potatoes, peeled and shredded and drained on paper towel
- 2 carrots, shredded and drained on paper towel
- 2 tart apples, shredded and drained
- 1/2 cup onion, sliced thin
- 4 Tbsp cornstarch
- 1 tsp salt
- 1 tsp cinnamon
- pinch black pepper
- 2 eggs
- canola oil
Mix together: cornstarch, salt, cinnamon and pepper and toss with well-drained sweet potatoes, carrots, apples and onions.
Whip 2 eggs and mix with above..make patties and fry in canola oil over medium heat.
