Sweet Potato Enchiladas

Ingredients

  • 2 med sweet potatoes, baked and diced
  • 1/2 onion, minced
  • 3 cloves garlic, minced
  • 15 oz can black beans, drained
  • 2 tsp lime juice
  • 2 tbsp sliced green chilies
  • 2 tsp chili powder
  • 1 tsp cumin
  • 15 oz can green chili enchilada saice
  • 1/2 cup water
  • 10 tortillas, warmed

Preparation

Step 1

Preheat oven to 350
In large bowl combine sweet potatoes, onion, garlic, beans, lime juice, chilies, chili powder and cumin.

In separate bowl combine enchilada sauce and water. Add ¼ cup of this mixture to the sweet potatoes.

Spread 1/3 cup sauce in the bottom of a casserole dish.

Place 1/3 cup potato mixture on each tortilla and wrap. Place in casserole dish.

Pour remaining sauce over top. Cover with vegan cheese.

Bake 25-30 minutes.

Serve with sour cream.
