Ingredients
- 1/2 head leaf lettuce, chopped
- 1/2 head romaine lettuce, chopped
- 1 C celery, diced
- 4 green onions, diced
- 1 11 oz can mandarin oranges
- 1 avocado, chopped
- 1 apple, diced
- 1/4 C dried currants
- 1/2 C blue or feta cheese
- Optional: 3 cooked chicken breasts, diced or sliced
- CANDIED ALMONDS
- 1/2 C sliced almonds
- 3 T sugar
- SALAD DRESSING
- 1/4 C oil
- 1 T parsley
- 2 T sugar
- 2 T white wine vinegar
- 1/2 t salt & pepper

Step 1
1. Chop all ingredients. Save the apples & avocados until right before serving to preserve color.
2. Candy the almonds by cooking for a few minutes in a skillet until toasted.
3. Mix dressing & toss right before serving. Enjoy!
