  • Eggplants
  • Milk
  • Egg
  • 1 cup of Crisco (or oil)
  • 1 cup of flour
  • Salt (Pepper optional) to taste

Preparation

Step 1

Peel skin off of eggplants
Cut into slices
Lightly salt (pepper optional)
Dredge in milk and egg
Coat both sides of eggplant with flour and set aside
Melt Crisco (or oil) in skillet and heat until hot.
Fry eggplant on both sides until golden brown or done
