Ingredients
- frosting:
- 2 c packed brown sugar
- 1 c veg oil
- 4 eggs
- 2 c flour
- 2 tsp cinnamon
- 2 tsp baking soda
- 2 tsp baking powder
- 3 c grated carrots
- 1 tsp salt
- 8 oz cream cheese at room temp
- 1/2 tsp vanilla
- 3 c icing sugar, sifted

Preparation
Step 1
Combine sugar and oil. Beat in eggs one at a time. |In another bowl, combine flour, baking owder, soda, cinnamon and salt and gradually add to the oil mixture. Add carrots and beat approximately 100 strokes by hand.
Grease 2 round pans or use bundt pan, I perfer . Bake at 350 for 35 mins.
Frosting:
Combine ingredients and beat well. spread frosting between cake layers as well as outside. If making bundt, use half the amounts it will be ample.
