Ingredients
- Liquid:
- 1 1/2 # White Potatoes Peeled & Sliced 1/4"
- 1/2 # Kielbasa or Andouille Sliced 1/4"
- 1/2 C Yellow Onion Diced
- 1 T EVOO
- 1 T EVOO
- 1 T Butter
- 1/2 C Rice Vinegar
- 2 T Brown Sugar
- 1 T Dijon Mustard
- 2 T EVOO
- Salt & Pepper to Taste

Preparation
Step 1
Preheat Oven 450F.
Large Bowl, Add Potatoes 1 T EVOO & Salt-Pepper, Toss to Mix. Place in 9x12 Pyrex Dish Sprayed.
Cook 10 Minutes on Lower Rack, Stir. Move to Middle Rack for 10 Minutes until Brown.
Large Skillet, Brown Sausage. (or cook in water) Remove & Keep Warm.
Large Skillet Medium Heat, Add 1 T EVOO, 1 T Butter & Onions. Saute until Soft & Brown, 3-5 Minutes.
Small Bowl Whisk Liquid, Add to Skillet along with Potatoes & Sausage. Simmer to Reduce Liquid, Stir.
Serve Hot, with Bush's Silverfloss Bavarin Sauerkraut & Rye Bread.
