Ingredients
- 1/2 cup cooking oil
- 2 cups sugar
- 2 cups grated carrot
- 4 eggs
- 1 tsp cinnamon
- 2 cups self rising flour
- 1/2 stick butter, softened
- 8oz package cream cheese
- dash salt
- 1 tsp vanilla
- 1 box confectioners' sugar
- 1/2 cup chopped pecans

Preparation
Step 1
Preheat oven to 350 degrees.
Grease and flour 9x13 inch pan or 2 9 inch cake pans.
Blend oil and sugar.
Add carrots, eggs, cinnamon and flour.
Mix until smooth.
Pour into pan(s).
Bake for 25-30 minutes.
Cool.
For icing - Cream butter, cream cheese, salt and vanilla.
Add confectioners' sugar.
After icing the cake, decorate with chopped pecans.
