Sausage-Parmesan Couscous Salad

Ingredients
- 2 cups water
- 1/2 tsp salt
- 1 2/3 uncooked couscous
- 1/2 cup finely chopped tomato
- 3 ounces finely chopped precooked chicken and sun dried tomato or other chicken sausage
- 2 tbsp water
- 2 tbsp balsamic vinegar
- 1/2 cup finely grated fresh Parmesan cheese

Preparation
Step 1
Bring 2 cups water and salt to a boil in a medium-size saucepan; gradually stir in couscous, tomato and sausage in a large bowl. Mix 2 tbsp water and vinegar, drizzle over couscous mixture, tossing gently. Sprinkle with cheese.
