Chicken Artichoke and Mushroom Casserole

Ingredients

  • 4 chicken breasts
  • 1 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp paprika
  • 6 T butter
  • 1 can artichoke hearts [in water]
  • 1/2 lb mushrooms
  • 2 T flour
  • 2/3 c regular strength chicken broth
  • 1/4 tsp dried rosemary

Preparation

Step 1

Sprinkle chicken with salt, pepper and paprika. Brown in 4 T butter and remove to casserole dish which has a cover. Arrange artichoke hearts around and between chicken. Melt remaining butter in pan and saute mushrooms. Sprinkle flour over mushrooms and add broth and rosemary. Cook while stirring until lightly thickened. Pour over chicken and artichokes. Cover and bake at 375 for 40 minutes or until tender.
