Ingredients
- 3 Tbsp reduced sodium chicken broth
- 1 Tbsp olive oil
- 1 shallot, finely chopped
- 1 garlic clove, minced
- 2 tsp grated lemon zest
- 1 Tbsp lemon juice
- 1/4 cup chopped minced fresh herbs, such as mint, parsley, chives, and tarragon
- 3/4 tsp salt
- Pinch cayenne
- 4 (1/4 lb) boneless pork loin chops, trimmed
- 1/2 tsp black pepper

Step 1
1. To make the vinaigrette, whisk together the broth, oil, garlic, lemon zest and juice, herbs, 1/4 tsp of the salt, and the cayenne in a small bowl; set aside.
2. Sprinkle the pork chops with the remaining 1/2 tsp salt and the pepper. Spray a large nonstick skillet with olive oil nonstick spray and set over medium-high heat. Add the pork chops and cook until an instant-read therometer inserted into the side of a chop registers 160 degreesF for medium, about 4 minutes each side. (I prefer 3 minutes each side) Transfer to a platter. Rewhisk the vinaigrette and spoon over the chops.
Per serving: 1 chop and about 1 Tbsp vinaigrette.
