Ingredients
- 1 chopped onion
- 1 clove chopped garlic
- Chopped carrots
- Chopped celery
- 2 cans diced tomatoes with green chilis
- 6 cups water (or veggie broth)
- 1 can garbanzo beans, rinsed
- 1 can canellini beans, rinsed
- 1 cup lentils
- 2 tsp garam masala (it’s a tasty Indian spice)
- 2 tsp curry powder

Preparation
Step 1
Saute veggies in olive oil for a few minutes, and then add water and tomatoes. Cook over medium heat until boiling; add spices and all the beans. Cover and simmer for about an hour or so. Puree about one-third (or more if you want) of the soup in a food processor and then add back to pot and stir (this really just thickens it up). Enjoy.
