Ingredients

  • 1/2 tsp Lime rind
  • 1 tb Lime juice
  • 1 1/2 tsp Ginger
  • 1 clv Garlic
  • 1/2 c Onion
  • 1/2 tsp Red Curry Paste
  • 1 c Chix broth
  • Dried Apricots
  • 1 tsp Honey
  • Green Onions
  • Cooked rice

Preparation

Step 1

Cook pork (m-h) 2 min each side
Remove -coat pork in Lime juice, rind & ginger
Saute onions & curry 2 min.
Add pork mix, broth, apricots, honey & garlic
Boil
Cover, reduce heat -10 min.
Remove pork -increase heat (m-h)
Add cooked rice -heat
