- 1 white cake mix
- 1/2 cup oil
- 3 eggs
- 8 oz. carton sour cream
- 15 oz. can coconut milk
- 1 cup coconut
- Extra coconut to cover the top of the cake
- Cream cheese frosting
- 8 oz carton cool whip
Mix first 6 ingredients in a large bowl.
Baked in a greased 9x13 pan at 350 for 30-40 minutes.
After cake has cooled, cover with the rest of the coconut then cover with a layer of cream cheese frosting, and then cover with cool-whip.
Store cake in the refrigerator well covered.
