Homemade Apple Pie Filling

Ingredients
- 10 c. water
- 4-1/2 c. sugar
- 1 c. cornstarch
- 3 T. lemon juice
- 2 t. cinnamon
- 1/4 t. nutmeg
- 1 t. salt
- 2 to 3 drops yellow food coloring
- 5-1/2 lbs. apples, cored,
- peeled and sliced
- 6 1-quart canning jars
- and lids, sterilized

Preparation
Step 1
Combine all ingredients except apples in a large saucepan. Cook over low heat until thickened, stirring occasionally; set aside. Divide apple slices equally among hot sterilized jars; ladle thickened sauce over top, leaving 1/2-inch headspace. Wipe rims; secure with lids and rings. Process in a boiling water bath for 20 minutes; set jars on a towel to cool. Check for seals; attach instructions. Makes 6 jars. Instructions:
Pour one jar filling into an unbaked 9-inch pie crust. Arrange a second unbaked pie crust over top; crimp crust and cut several vents. Bake at 350 degrees for 30 to 40 minutes. Serves 8.
