Mango Cream Tart

  • 1 cup sugar
  • 1/4 cup cornstarch
  • 1/4 tsp. salt
  • 2 1/2 cups sliced mango
  • 1 1/2 cups plain yogurt or sour cream
  • 3 beaten egg yolks
  • 1 Tbs. lime juice
  • whipped cream
  • strawberries and kiwi for garnish if desired



Step 1

prepare pastry for 1 crust pie
let cool
stir together sugar, starch, and salt in a heavy med. saucepan
blend or process mangoes smooth
stir mangoes and yogurt or sour cream into sugar mix
cook and stir over med. heat till thick and bubbly
cook and stir 2 min. more
remove from heat
stir about 1 cup of hot mix into egg
return all to hot mix
bring to gentle bowl, stirring constantly
cook and stir 2 min. more
remove from heat
stir in lime juice
pour into shell
cool 1 hr.
cover and chill 4 hrs. minimum
serve with whipped cream and fruit if desired
