  • 1/2 cup unsalted butter, softened, plus more for greasing pan
  • Parchment paper
  • 1 1/2 cups all purpose flour; plus more for dusting pan
  • 1 tsp baking soda
  • 3/4 tsp ground cinnamon
  • 1/2 plus 1/8 tsp ground cardamom
  • 1/2 tsp salt
  • 1 cup firmly packed light brown sugar
  • 1 large egg
  • 1 cup chunky style applesauce
  • 2-3 tbsp. apple cider
  • 1 3/4 cups powdered sugar
  • Dried apple slices for garnish (if desired)

Step 1

Preheat oven to 350. Butter an 8 inch round cake pan; line parchment paper round. Butter parchment; dust with flour, tapping out excess. Whisk together 1 1/2 cups flour and next 4 ingredients.

Beat 1/2 cup butter and brown sugar at medium-high speed with an electric mixer 3 to 5 mins. Add egg; beat until blended. Reduce mixer speed to low. Gradually add flour mixture; beat just until blended. Stir in applesauce. Spoon batter into prepared pan; smooth top with an offset spatula.

bake 50 mins or until cake tester comes out clean but slightly wet; cool 10 mins. Remove from pan to wire rack; cook completely, about 1 hour.

Whisk together apple cider and powdered sugar until smooth and pourable. Place cake (on wire rack) over a rimmed baking sheet. Pour glaze over cake. Serve topped with dried apple slices if desired.
