Strawberry Creams
Ingredients
- 1 envelope unflavored gelatin
- 1/2 cup water
- 1 lime
- 1 lb. strawberries, plus 1 cup for garnish
- 1/2 cup sugar plus 1 Tbs. for garnish
- 1/3 cup heavy whipping cream
- 6 round sugar or shortbread cookies
- whipped cream

Preparation
Step 1
in 1 qt. saucepan, sprinkle gelatin evenly over 1/4 cup cold water, set aside
from lime grate 1/2 tsp. peel and squeeze 1 Tbs. juice
coarsely chop 1 lb. strawberries
in blender combine chopped strawberries, lime peel, and juice, 1/2 cup sugar, and remaining 1/4 cup water, puree
transfer to med. bowl
place that bowl in a larger bowl of ice water
heat gel mix over low heat about 5 min. or until dissolved
stir frequently
stir into strawberry mix
stir with rubber spatula until it begins to mound
remove from ice bath
in small bowl beat cream to stiff peaks at med. speed
fold into strawberry mixture until blended
spoon into 6oz. ramekins, top each with cookie
cover and refrigerate until well set about 6 hrs. or overnight
for garnish, quarter strawberries and toss with sugar
serve with whipped cream
