Ingredients
- 2 teaspoons peanut oil
- 1/4 teaspoon red pepper flakes
- 1/2 cup french green beans, cut into bitesize pieces
- 1/3 cup matchstick carrots add to shopping list
- 1/4 cup whole unsalted roasted cashews
- 2 teaspoons reduced-sodium soy sauce
- 2 teaspoons orange juice
- 1/4 teaspoon orange zest
- 1 1/2 cups medium frozen shrimp, defrosted with tails removed

Preparation
Step 1
1. Combine oil and pepper flakes in a medium-hot skillet.
2. Add everything but the shrimp (they're already precooked before freezing). Cook for 2 to 3 minutes, stirring frequently.
3. Add shrimp and cook for another 2 to 3 minutes, stirring frequently. Serve over brown rice.
