Ingredients
- marinade:
- 2 chickens cut up
- 1/2 cup light brown sugar
- 1/2 cup dry white wine
- 1/4 cup chopped fresh parsley
- 12 cloves garlic, peeled, minced
- 1/2 " x 1" piece fresh ginger, grated
- 1 Tbs. dried thyme
- 1/3 cup red wine vinegar
- 1/4 cup oil
- juice of 1 lemon
- 3 bay leaves
- 1 cup dried apricots, plumped in 1/2 cup orange juice
- pepper
Details
Preparation
Step 1
mix ingredients for marinade in large bowl
add chicken, turn to coat, cover, refrigerate overnight
arrange in single layer in baking pan
spoon extra marinade over chicken
sprinkle with brown sugar, add wine and parsley
bake at 375 for 45 min.
remove chicken
skim fat off juices
serve on side
