Lamb and Mushroom Casserole

Ingredients
- 3 tbsp. olive oil
- 2 lb. boned lamb shoulder or leg of lamb, cut into serving pieces
- 1 lb. mushrooms
- 1 c. dry white wine
- salt and freshly ground black pepper
- chopped parsley to garnish

Preparation
Step 1
1. Heat the oil in a flameproof casserole, add the meat and fry over moderate heat until browned on all sides.
2. Add the mushrooms, whine and enough water tojust cover the meat.
3. Season with salt and pepper to taste.
4. Cover and cook in preheated moderate hot oven at 375 Degree F for one hour or until the meat is tender, stirring occasionally.
