Potato Caesar Salad

Ingredients

  • 2 1/2 potatoes
  • 2 tbsp. lemon juice
  • 1 tsp. Worcestershire sauce
  • 1/2 tsp. each: dry mustard, salt, black pepper
  • 1/4 cup light mayonnaise
  • 3 tbsp. plain yogurt
  • 2 garlic cloves, minced
  • 2 finely chopped green onions
  • 2 tbsp. freshly grated Parmesan

Step 1

Peel potatoes and cut into 1" cubes. Place in a large saucepan and cover with salted cold water. Bring to the boil, reduce heat and simmer for 6-8 mins., just until potatoes are tender, but still firm. In bowl, whisk lemon juice, Worcestershire, mustard, salt and pepper until dissolved. Whisk in mayonnaise, yogurt and garlic. Once potatoes are cooked, drain well and chill. Gently toss with mayonnaise, green onion and Parmesan. Cover and refrigerate until ready to serve.
