- 8 medium russet potatoes
- 2 large onions
- 5 large eggs, beaten with a whisk
- 1 tsp salt
- 1/3 c olive oil
- 3/4 c matza meal

Step 1
1. Preheat oven to 425 degrees. Spray a 13 x 9 x 2 inch baking dish with vegetable spray.
2. Peel potatoes and onions, and cut into pieces that will fit into the tube of food processor. With the shredding disk of processor, grate the potatoes and onions. Place potato mixture in a large bowl.
3. In a small bowl, whisk eggs, oil and salt together. Add this mixture to potatoes and blend. Sprinkle potato mixture with the matzo meal and blend well. Spoon potato mixture into the greased baking dish.
4. Bake uncovered at 425 degrees for 15 minutes. then turn down the temperature to 350 degrees and bake for 30 minutes more.
