Cheesy Spinach Tartlets

Ingredients
- Crust:
- 1 15 oz. package Pillsbury pie crust
- Filling:
- 1 tsp olive oil or vegetable oil
- 4 c packed chopped fresh spinach
- 4 oz. crumbled feta cheese
- 1/2 c ricotta cheese
- 1/2 tsp dried dill weed
- 1/4 tsp salt
- 1/2 tsp nutmeg
- Dash pepper
- 1 egg

Preparation
Step 1
Heat oil in medium skillet over medium heat until hot. Add spinach; cook and stir 2-3 minutes or until wilted and tender. Cool slightly.
In medium bowl, combine feta, ricotta, dill, salt, nutmeg, pepper and egg; mix well. Stir in spinach until well mixed.
Heat oven to 400 degrees F. Unfold 1 pie crust. Press out fold lines. Place crust on cutting board. With 2 1/2" round cutter, cut 12 rounds. Repeat with remaining pie crust and flour.
Press rounds into greased 24-muffin tins. Spoon 1 tbsp spinach mixture into each round.
Bake at 400 degrees F for 13-18 minutes or until filling is set and crust is light golden brown. Cool 5 minutes, remove from pan and serve.
