Paprika Rubbed Chicken with Roasted Garlic

- 2 tbsp paprika
- 1 tsp dried oregano
- 3 lbs chicken (breasts or bone-in parts)
- salt
- 1/4 cup olive oil
- 8 heads garlic, halved horizontally

Step 1
Preheat oven to 450. Mix together paprika, oregano, and 1 tbsp salt. Place chicken on a rimmed baking sheet. Pat dry with paper towels. Rub with 1 tbsp oil, then with paprika mixture.
Reduce oven temp to 400. Roast for 10 minutes. Remove from oven, and baste with pan juices. Scatter garlic heads around chicken, drizzle with oil. Roast for 10 minutes. Tent with foil. Roast until juices run clear. Uncover and let rest for 10 minutes. Serve with roasted garlic.
