Ingredients

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 Tablespoons sugar
  • 1/3 cup butter, very cold
  • 1/2 cup sour cream
  • 1 egg, lightly beaten
  • 2/3 cup dried apricots, chopped fine
  • 2 teaspoons milk
  • 1 Tablespoon sugar

Preparation

Step 1

Medium mixing bowl
Pastry Blender (helpful but a fork can be used instead)
Baking Sheet or scone pan

Instructions:

Step 1: Preheat oven to 400 degrees. Lightly grease baking sheet or scone pan with cooking spray.

Step 2: In a medium bowl, combine the flour, baking powder, baking soda, salt and sugar. Cut in the cold butter with a pastry blender or fork until the mixture is crumbly.

Step 3: Add the sour cream and egg, stirring just until dry ingredients are moistened. Stir in dried apricots that have been chopped fine.

Step 4: Turn out dough onto a lightly floured surface, and knead lightly 4 to 5 times, folding over each time.

Step 5: Gently pat dough to an 8" circle on a greased baking sheet.

Step 6: Brush top with milk and sprinkle with 1 Tablespoon sugar.

Step 7: Cut circle into 8 wedges using a sharp knife, separate wedges slightly.

Step 8: Bake at 400 degrees for 14 to 16 minutes or until lightly browned.
