Ingredients
- 2 lg. onions, chopped
- 3 tbsp. butter
- 2 tbsp. flour
- 2 c. water, divided
- 4 c. chicken broth
- 2 med. potatoes, peeled & diced
- 1 1/2 c. mashed potato flakes
- 1/2 lb. sliced bacon, cooked & crumbled
- 3/4 tsp. pepper
- 1/2 tsp. salt
- 1/2 tsp. dried basil
- 1/8 tsp. dried thyme
- 1 c. half and half
- 1/2 c. shredded cheddar cheese
- 2 green onions, sliced

Preparation
Step 1
In large skillet, saute onions in butter till tender. Stir in flour. Gradually stir in 1 c. water. Bring to boil; cook and stir for 2 mins. or till thickened. Transfer to a 5 qt. slow cooker.
Add broth, potatoes, flakes, bacon, pepper, salt, basil, thyme, and remaining water. Cover and cook on low for 6-8 hours or till potatoes are tender. Stir in cream; heat through. Garnish w/ cheese & green onions.
