Roasted Garlic Mushrooms

Ingredients

  • 16 open cup mushrooms (button mushrooms) - cut stalks flush
  • 3 tblsp. oil of choice
  • 5 tblsp. unsalted butter
  • 3 cloves garlic - chopped fine
  • 2 tblsp. fresh thyme - chopped
  • salt and fresh ground pepper
  • 1 1/2 tblsp. lemon juice
  • 3 tblsp. fresh breadcrumbs / panko

Preparation

Step 1

Preheat oven to 400 F
Lightly fry mushrooms in oil, cap side down for about 30 seconds.
Arrange in a shallow pan with stalk side up.
Mix butter, garlic, thyme, lemon juice and seasoning
Spoon small amount of garlic butter mixture into each mushroom.
Lightly sprinkle bread crumbs over tops and press down gently if needed.
Cook for 10 minutes in oven.

Options:
Sprinkle walnuts or pecans over top.
