Cherry Chipotle Chicken

  • 1 1/2 pounds of THIN (marsala style) boneless chicken breast
  • John Henry's Cherry Chipotle Rub
  • 1 Cup Frozen Dark Cherries
  • 2 Portabela mushrooms sliced longwise
  • 2 cups white wine
  • 1 tbs corn starch
  • 2 tbs water

Preparation time 15mins
Cooking time 35mins


Step 1

1. Generously rub chicken with John Henry's Cherry Chipotle rub and place in tupperware for 30 minutes
2. place breast in Super Wave (or on grill) for 5-10 minutes (until starts to brown) and turn (sprinkle additional rub if necessary and rotate top and bottom rack if using Super Wave) cook until done.
3. While chicken is roasting place wine and leftovers from the tupperware bin in a large frying pan
4. Add cornstarch mix and cherries...simmer 5 minutes
5. Add mushrooms to saucepan
6. When chicken is done add pieces to sauce pan along with drippings from bottom of Super Wave
7. Simmer until chicken and mushrooms are tender

Serve over noodles or spaghetti squash
