ONION SHORTCAKE ( Marvin Palmer)

Ingredients

• 1 ) 2 large onions, sliced thin (vidalia onions are best) Edit Delete
• 2 ) 1/2 cup butter Edit Delete
• 3 ) 1 (8 oz.) container sour cream Edit Delete
• 4 ) 1/2 teaspoon dried dill weed Edit Delete
• 5 ) 1/4 teaspoon salt Edit Delete
• 6 ) 1 (8 oz.) pkg. grated cheddar cheese Edit Delete
• 7 ) 1 (15 oz.) creamed corn, undrained Edit Delete
• 8 ) 1/3 cup milk Edit Delete
• 9 ) 1 (8 1/2 oz.) pkg. jiffy corn muffin mix Edit Delete
• 10 ) 1 egg, slightly beaten Edit Delete
• 11 ) 4 drops hot red pepper sauce or to taste

Preparation

Step 1

Saute onions in butter. Stir in sour cream, dill weed, salt, and half the cheddar cheese. In a separate bowl, combine corn, milk, dry muffin mix, egg, and hot pepper sauce. Put corn mixture in buttered 9x13 baking dish. Spread onion mixture over top. Top with remaining cheddar cheese. Bake in a preheated 425 degree oven for 30-40 minutes.
