Ingredients

  • 1

    c. yellow cornmeal

  • 1

    c. flour

  • 2

    t. baking powder

  • ½

    t baking soda

  • 2

    T sugar

  • 1

    t. salt

  • 1

    c. buttermilk

  • 2

    eggs, lightly beaten

  • ¼

    c. melted unsalted butter

  • 1

    c. shredded jack cheese

  • 2

    jalapeno peppers, diced

  • 1

    jalapeno pepper, cut in 12 slices

Directions

Preheat oven to 400 degrees. Spray muffin tin with non-stick spray. In large bowl, combine cornmeal, flour, baking powder, baking soda, sugar and salt. In another bowl, whisk together buttermild, eggs, butter, cheese and diced jalapeno peppers. Add wet ingredients to dry ingredients and stir until incorporated. Divide batter into prepared muffin pan, filling 2/3 way full. Place jalapeno slice on top of each muffin. Bake until golden, about 25 minutes.
