Ingredients

  • 1 15-oz can chickpeas, drained & rinsed
  • 2 5-6oz cans water-packed tuna, drained and flaked
  • 1 large red bell pepper, finely diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup fresh parsley, chopped
  • 4 tsp capers, rinsed
  • 1 1/2 tsp fresh rosemary, finely chopped
  • 1/2 cup lemon juice
  • 4 Tbs extra virgin olive oil
  • Freshly ground black pepper, to taste
  • 1/4 tsp salt
  • 8 cups mixed salad greens

Preparation

Step 1

Combine beans, tuna, bell pepper, onion, parsley, capers, rosemary, 1/4 cup lemon juice and 2 Tbs oil in a medium bowl. Season with salt and pepper. Combine the remaining 1/4 cup lemon juice, 2 Tbs olive oil and salt in a large bowl. Add salad greens; toss to coat. Divide greens among 4 plates, top each with tuna salad.
