Reliant Stadium Potato Salad

  • ■3 lbs baked potatoes
  • ■1 cup sour cream
  • ■3 Tbls chopped cooked bacon
  • ■1 cup mayonnaise
  • ■1 bunch chopped green onions (use green part only)
  • ■1 can Chipotle Peppers in Adobo Sauce, 12 oz.
  • ■1 Tbls vinegar
  • ■grated cheddar for garnish


Servings 8


Step 1

Bake potatoes in oven and let cool. While at room temperature mix mayo, sour cream, and bacon. Mix well and season with salt and white pepper. Open chiles and add 2 tablespoons of Adobo sauce from peppers. Mix. If you want spicier add 1 more tablespoon. Garnish with leftover chives and half a cup of grated cheddar cheese.
