Twice Baked Parmesan-Chive Potatoes

Ingredients
- 6 Russet Potatoes, med. Sized
- 1/2 C Milk
- 1/4 C Butter
- 1 Egg
- 1/2 C Parmesan cheese
- 1/4 C Chives or scallion, chopped
- 1/4 t Salt and Pepper
- 1/8 t Ground Nutmeg
- Paprika for sprinkling top

Step 1
1.Pierce potatoes and bake on sheet 50-60 minutes at 400 degrees. Cool 15 minutes.
2.Cut potatoes lengthwise. Scoop pulp into bowl, reserve.
3.Simmer butter and milk, then pour over potato pulp, mash. Add eggs, ¼ C cheese, chives and S & P.
4.Fill potato shells with potato mash. Sprinkle with additional cheese and paprika for color.
5.Bake at 350 degrees for 30 minutes.
