Ingredients
- 1/2 cup julienned sweet red pepper
- 1/2 cup chopped onion
- 2 Tbsp. olive or vegetable oil
- 3 eggs
- 1/2 cup milk
- 1 cup chopped cooked chicken-optional
- 1 10oz package frozen chopped spinach, thawed and squeezed dry
- 1/2 cup shredded mozzarella cheese
- 1 Tbsp. grated Parmesan cheese
- 1/2 tsp. salt
- 1/4 tsp. pepper

Preparation
Step 1
In a skillet, sauté the red pepper and onion in oil until tender. In a bowl, beat eggs and milk. Stir in chicken if desired, 1/2 cup spinach, mozzarella and parmesan cheeses, salt and pepper. (save remaining spinach for another use. Add to the skillet. Cover and cook over med heat for 7-10 minutes or until completely set. Cut into wedges.
