Pie - Four Berry

Ingredients
- Crust:
- 3 cups flour
- 1 1/2 tsp fine salt
- 1 tsp sugar (heaping)
- 1 1/2 cups solid veg shortening, cold
- 4 tbsp unsalted butter, cold
- Filling:
- 2 cups blueberries
- 2 cups sliced strawberries
- 1 cup raspberries
- 2 cups blackberries
- 2 tbsp flour
- 2 cups sugar
- 1/4 cup minute tapioca
- dash of lemon juice
- 4 tbsp unsalted butter, finely dice, cold

Step 1
To Make Crust:
Mix flour, salt, and sugar in a medium bowl. Cut the shortening into pieces into the dry mix until mixture is sandy. Cut/grate butter into the mix.
Add 1/4 cup ice-cold water, and mix with the dough. Continue to add water a tbsp at a time until dough stick together and forms a ball.
Divide into 2 equal parts, wrap each in plastic and refrigerate.
Preheat oven to 450
To Make Filling:
Gently toss berries with flour in a large bowl. Mix in the sugar, tapioca, and lemon juice.
Put a *large* piece of plastic wrap on the counter and sprinkle with flour. Set one of the dough balls in the center and cover with another piece of plastic wrap. Roll the dough until it forms a round 13in diameter. Remove top and place in the bottom of the pie pan. Repeat process for second ball of dough.
Put filling in the bottom crust. Scatter the top with butter and place top crust. Pinch crusts together. Make several small slits for steam.
Bake for 15 minutes. Lower to 425 and bake another 45-50 minutes.
Cool at least 2 hours.
