Blueberry Orange Muffins

  • 2 1/2 cup flour
  • 3/4 cup white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter
  • 1 cup orange yogurt
  • 2 eggs, lightly beaten
  • 2 teaspoons orange rind
  • 1 1/4 cups fresh or frozen blueberries



Step 1

Mix together flour, sugar, baking powder and soda, and salt. Cut in butter until mixture resembles fine crumbs. In small bowl, combine yogurt, eggs, and orange rind. Add all at once to flour mixture. Stir just until combined and gently fold in blueberries.
Bake 400°F for 20-25 minutes
