  • cups mashed ripe bananas

  • cups plain fat-free yogurt

  • cup creamy peanut butter

    tbsp butter, melted

    cup sugar substitute

  • ½

    cup Splenda brown sugar

  • cups whole wheat flour

  • ¼

    cup ground flaxweed

  • ¾

    tsp baking soda

  • ½

    tsp salt

  • ¾

    tsp cinnamon

    tbsp chopped dry roasted peanuts

  • Cooking spray

  • Glaze:

  • cup Confectioners sugar substitute

  • 1

    tbsp skim milk

  • 1

    tbsp creamy peanut butter


1. Preheat oven to 350 degrees. 2. Prepare bread, combine first 5 ingredients in a large bowl; beat at medium speed. Add granulated and brown sugar; beat until blended. 3. Combine flour and next 5 ingredients in a small bowl. Add flour mixture to banana mixture; beat just until blended. Stir in nuts. Pour into a 9x5 inch loaf pan coated with cooking spray. Bake at 350 for one hour or until a wooden stick comes out clean. Cool 10 minutes in pan. Remove from pan. 4. To prepare glaze, combine sugar, milk and 1 tbsp peanut butter in a small bowl. Drizzle glaze over bread.
