Lemon Chicken Kebabs

You can cook these on the grill or in the broiler. If you use bamboo skewers, soak them for 20 minutes to prevent burning.

Ingredients

  • 1/4 cup extra virgin olive oil
  • 2 Tbsp fresh lemon juice
  • 3 garlic cloves, crushed
  • 1/2 tsp coarsely cracked pepper
  • 1 1/4 lb skinless, boneless chicken breasts, cut into bite size pieces

Preparation

Step 1

1. Light the grill or preheat the broiler.

2. In a small bowl, combine the oil, lemon juice, garlic and pepper. Add chicken and toss to coat. Marinate for 15 minutes. Thread three or four chicken pieces onto each skewer. Reserve the marinade.

3. Grill- grill chicken over moderately hot coals or med heat (gas), basting frequently with marinade and turning after 6 minutes, until chicken is no longer pink, but still juicy, 12-15 minutes.

Broil- Place chicken in broiler, turning frequently, for about 5 minutes
