Asparagus Soup

Ingredients
- 1 cup chopped onions
- 1 Tbs butter
- 1 Tbs veg oil
- 1 lb fresh asparagus, trimmed and cut into 1" pieces
- 2 cans (14.5oz) chicken broth
- 1 small baking potato, peeled and cubed
- 1/2 cup baby spinach or arugula (about 1oz)

Step 1
In medium saucepan over medium heat, cook onions in butter and veg oil 2 minutes or until tender, stirring occasionally.
Add asparagus, broth and cubed potatoes. Increase heat to high and bring to a boil. Reduce heat to medium, let simmer 10 minutes or until asparagus and potatoes are tender. Remove from heat, stir in spinach.
In blender puree soup in batches 30 sec or until smooth. Return to saucepot. Season soup with salt and pepper.
