Apple Enchiladas

Ingredients

  • 1 (21 oz) can apple pie filling
  • 1 tsp cinnamon
  • 6 (8 inch) flour tortillas
  • 1/2 cup butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 cup water
  • 6 scoops of vanilla ice cream

Preparation

Step 1

1.In a bowl, combine the pie filling and cinnamon until combined.
2.Place about 1/4 cup of the pie filling down the center of each tortilla.
3.Roll tortillas up burrito style and place in an 11 x 8 baking dish seam side down.
4.In a medium sauce pan, combine the butter, sugar, brown, sugar, and water. Cook over medium heat stirring constantly until boiling.
5.Once boiling reduce heat and simmer mixture for 3 minutes while stirring occasionally.
6.Remove from heat and pour over enchiladas. Allow enchiladas to sit for 45 minutes.
7.Preheat oven to 350 degrees and cook for 20-30 minutes until golden brown.
8.Serve enchiladas topped with a scoop of vanilla ice cream and drizzle with sauce from the pan.
