Green chili corn pudding

Ingredients

  • Dry:
  • 1 1/4 C flour
  • 1/2 C sugar
  • 2 T baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. cayenne pepper
  • Wet:
  • 8 whole eggs
  • 1 stick butter, melted
  • 1 C sour cream
  • 1/4 C lime juice
  • Veggies:
  • 1 8-oz. can of cream corn
  • 1 C green chiles, drained
  • 1 # fresh cut corn
  • 1 bunch cilantro, chopped

Preparation

Step 1

Heat oven to 350 degrees.

Mix dry and wet ingredients separately.

Blend wet ingredients with mixer. Blend dry ingredients into the wet ingredients. Add veggies.

Coat casserole dish with butter or oil and dust with flour.

Bake 40 minutes in pre-heated oven or until golden brown and firm.

Variations:

- Replace green chilies with sun-dried tomatoes
- Add basil
- Use mushrooms in place of chilies.
