  • 1 1/2 pounds skinless, boneless chicken thighs
  • 2 teaspoons canola oil
  • 1/2 cup frozen cut okra
  • 1/2 teaspoon chopped fresh thyme
  • 1 (14.5 ounce) can stewed tomatoes, undrained and chopped
