  • 1 1/2 pounds skinless, boneless chicken thighs
  • 2 teaspoons canola oil
  • 1/2 cup frozen cut okra
  • 1/2 teaspoon chopped fresh thyme
  • 1 (14.5 ounce) can stewed tomatoes, undrained and chopped

Step 1

1. Rub Creole seasoning evenly over chicken..

2. Heat oil in a large nonstick skillet over medium-high heat. Add
chicken; cook 2 minutes. Turn chicken over: Stir in okra, thyme,
and tomatoes. Bring to a boil; cover, reduce heat, and simmer 10
minutes. Uncover and cook 2 minutes or until liquid is reduced by
half.

Serving size: about 2 chicken thighs and 1/2 cup tomato mixture.

Suggest serve with Dirty Rice.
