Taco Stuffed Potatoes

Ingredients

  • 1 pound ground beef
  • 1 small onion, chopped
  • 3/4 cups water
  • 1 package (1.25 oz. ) ORTEGA Taco Seasoning Mix - Regular
  • 4 medium baking potatoes, baked
  • 3/4 cups sour cream, or nacho sauce
  • 1/2 cup sliced green onions, (optional)
  • 1/2 cup sliced ripe olives, (optional)

Preparation

Step 1

COOK beef and onion in large skillet until beef is browned; drain. Stir in water and seasoning mix; bring to a boil. Reduce heat to low; cook, stirring occasionally, for 3 to 4 minutes.

CUT each potato in half lengthwise and crosswise, almost all the way through. Top each potato with 1/4 of taco filling. Top with sour cream, green onion and olives.
