Ingredients

  • 6 C water
  • 1 lg. onion, chopped
  • 1 tsp. lemon pepper
  • 2 qts. Half and half
  • 2 lbs. Velveeta cheese
  • Approx. 1/2 C. flour
  • 3 lbs. frozen chopped broccoli, drained and rinsed with hot water
  • 3 T. chicken base
  • 1 tsp. garlic powder
  • 1 qt. whipping cream
  • 4 C. milk
  • 1 stick butter

Preparation

Step 1

Boil water, chicken base, onion, garlic powder and lemon pepper in top of double boiler over simmering water for 5 minutes. Stirring constantly, add whipping cream, half and half and milk. Add cheese and heat, stirring constantly, until cheese is melted. In a saucepan, make a thick paste by melting butter and stirring in flour over medium heat until smooth. Remove from heat and add mixture to soup until desired consistency is reached. Add broccoli and serve.
