Salmon tacos

Ingredients
- Seasoning Blend:
- 1 lb salmon fillet
- 1 tbs Mexican Seasoning Blend (below)
- 1 c. shredded cabbage
- 1 diced avocado
- 1/2 c. diced tomatoes
- 1/2 c. chopped cilantro
- 1/4 c. chili powder
- 1 tbs oregano
- 1 tbs cumin
- 1/2 tsp garlic powder
- Store in airtight container.
- For tacos: 2 1/2 tbs per pound of beef
- As a rub: 1 tbs per pound

Preparation
Step 1
Rub fish with seasoning blend. Roast 8 minutes or just until cooked through. While fish cooks, toss cabbage, avocado, tomatoes, and cilantro together. Mix up dressing and stir in cabbage mixture. Break salmon into pieces. Fill 8 warmed corn or flour tortillas with salmon and vegetables. Top with cheese and sour cream if desired.
