Lamb meatballs over spinach cous cous

Ingredients

  • 1 lb ground lamb
  • 1 c plain bread rumbas
  • 1 large egg
  • 1/2 tsp ground coriander
  • 1/2 tsp garlic powder
  • salt and pepper
  • 2 1/4 c low sodium chicken broth
  • 10 oz package chopped spinach, thawed and squeezed dry
  • 1 1/2 c cous cous
  • 1/3 c dried apricots, chopped
  • 2 t olive oil
  • 2 t lemon juice

Step 1

1) preheat oven to 450, line rimmed baking sheet with foil and place wire rack on sheet.; mist with cooking spray

2) combine lamb, bread crumbs, egg, 1/2c water, coriander, garlic powder salt and pepper in large bowl. mix gently but thoroughly with hands. make 1 1/4' meatballs and place on wire rack. bake til just cooked through, about 12-14 minutes.

3) while meatballs are baking, bring broth and spinach to a boil in a medium saucepan. stir in cows cows, remove from heat and let stand 5 minutes. fluff with fork. toss in apricots, olive oil and lemon juice. season with salt and pepper if needed.
