Ingredients

  • 8 slices bacon, diced
  • 1 cup diced onion
  • 1 cup diced celery
  • 1 cup corn
  • 1 32oz carton chicken broth
  • cooked tail off shrimp (thawed and quartered)
  • 4 cups froz hash browns (shredded)
  • 1 cup heavy cream
  • 8 oz cream cheese (cubed)
  • 8 oz shredded cheddar cheese

Preparation

Step 1

Brown bacon. Remove bacon from pan and set aside. Add onion and celery to bacon drippings and saute for 3 minutes.
Add corn, chicken broth and hash browns. Bring mixture to a boil and reduce heat to low. Add cream and cream cheese and booked bacon pieces.
Simmer chowder for 25 minutes.
Stir in shrimp and cheddar cheese;simmer 10 minutes.
